Rolloff is the steepness or Frequency response on the Attenuation side of the Cutoff frequency knee. It is expressed in dB/Octave and generally there are 6 dB/Octave of Attenuation for each pole in the Filter (though this is not always the case)
As the Rolloff increases the frequencies will be lost faster and the Filter will sound more agressive, and less musical. A perfect Filter will have no Attenuation in the pass band and complete Attenuation in the stop band. The more poles a filter has, the more it can approach a perfect Filter.
